In material properties we can change the parameter stiffness to customise ground properties. My question is this unit "stiffness" is "coefficient of restitution" ? If yes, then is there any chart to see to relate the data for hard and soft ground? If no, what is the unit of the "stiffness" parameter (and the previous question)?

If you're using an OpenSim model, then you're probably using the Hunt-Crossley force model:
