Create model from scratch with my own stl files

Hi! I am new to this and I was spending some time looking for this information in the videos, webinars and tutorials but I did not find it. Maybe it is because you have a lot of information covering a broad spectrum of the software and I was not able to find it at my first and second sights. I am interested in creating my own model, with my own stl files and creating my own muscles and joints: Where I can find the appropiate webinar/tutorial? Thanks in advance!
